Understanding the fundamental interactions between egg yolk and potassium salts is essential in
the area of implantable medical devices. Fluorescence methods offer sensitivity required to study
the interaction of egg yolk with the potassium salts. The complex formation was studied with the
help of the UV absorption also. Further, it was conformed by X-ray diffraction and Scanning
electron microscope (SEM) analysis. The differences in fluorescence lifetimes may indicate the
structural changes induced in egg yolk by potassium salts.
